    Pumpkin Bars    

4 eggs
2 cups pumpkin
2 cups sugar
1 cup oil
2 cups flour
1 tsp. soda
1/2 tsp salt
2 tsp. baking powder
2 tsp. cinnamon
1 cup nuts
1/2 tsp. allspice (optional)
1/2 tsp. cloves (optional)

Combine dry ingredients and set aside. Mix together eggs, pumpkin, sugar, and oil.  Add dry ingredients and nuts. Bake in a jelly roll pan or cookie sheet with sides for 25 - 30 min. at 350 degrees.
CREAM CHEESE FROSTING:

8oz. softened cream cheese-DO NOT USE FAT FREE
4 cups 10X sugar
1/4 cup margarine
1/4 tsp. vanilla

    Fresh Apple Cake    

3 eggs
1 cup oil
2 tsp. vanilla
1/8 cup water
1 1/2 cups sugar
3 cups flour
1 tsp soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
3 cups chopped apples
1 cup nuts
1 cup raisins (opt.)

Beat eggs, oil, vanilla, water, and sugar together. Sift flour, soda, salt, &
cinnamon together and add to mixture. Then add apples, chopped nuts,
and raisins. (Mixture will be VERY thick) Spread in a 9 X13 pan and bake at
350 degrees for 35 min. or until done. Frost with cream cheese frosting.
CREAM CHEESE FROSTING:

4 cups   10X sugar
1/4 cup   margarine
1/4 tsp.   vanilla

    Crunch    

1 pkg. 10 oz. small mini pretzels
5 cups Cheerios
5 cups Corn Chex
2 - 12 oz. pkgs. Nestle Candy making vanilla chips
2 cups salted peanuts
1 lb. pkg. M & Ms
3 Tbs. vegetable oil

Combine the first 6 ingredients & set aside. Heat vanilla chips and oil in a 
double boiler until melted. Pour over cereal mix and gently stir until all is fully coated. Spread on wax paper to cool.

    Strawberry Pie    

1 quart  strawberries
3/4 cup water
3 Tbls. cornstarch
1 baked pie crust
3/4 - 1 cup sugar

Use 1 cup whole strawberries, cut up small, add 3/4 cup water & boil 
3 min.  Remove from heat. Add 3/4 to 1 cup sugar. Mix 3 heaping Tbls 
cornstarch to very small amount of cold water (just enough to make thick). 
Add to mixture & cook until clear. Cool. Add to strawberries (cut large 
ones in half) & put in baked pie shell. 
(Optional: You can use red food coloring in the glaze mixture.)

    Pecan Cheesecake    

18 crushed graham crackers
1/3 cup margarine
2 - 8 oz. pkgs. cream cheese (softened)
2 tsp, vanilla
1/4 cup caramel topping
1/4 cup sugar
1 cup pecan halves
1/2 cup light brown sugar
2 eggs, beaten

Mix together graham cracker crumbs, sugar & margarine. Press into sides and bottom
of 9" pie shell. Finely chop and toast pecans, then sprinkle 3/4 cup over the pie crust
and set aside. Blend cream cheese, brown sugar, & vanilla until creamy. Beat in eggs
till smooth. Pour into crust. Place remaining 1/4 cup pecans in circle around edge.
Bake 325 degrees for 40 - 45 min. Before serving drizzle with caramel topping.

    Apple Dumplings    

DOUGH
2 cups flour
1/2 tsp. salt
2 tsp. baking powder
2/3 cup butter or margarine
1/2 cup milk

SYRUP
1 cup brown sugar
1 Tbls. butter
1 cup water

Mix dry ingredients. Cut in butter, then add milk until soft dough forms. Peal and 
core apples.  Roll out about 1/4 cup dough per apple dumpling. Sprinkle dumpling 
with 1 tsp. cinnamon/sugar mixture. Fold ends together, and seal with milk. Place 
dumplings in pan. Heat syrup mixture ingredients in saucepan till melted, 
DO NOT BOIL. Spoon syrup over tops of dumplings, add rest to pan. Sprinkle tops 
of dumplings with cinnamon and nutmeg, to taste. Bake at 375 degrees
for 35 to 40 minutes or until golden brown on top. Makes 6 - 7 apple dumplings.

    Cookie Cutter Sugar Cookies    

1 1/2 cups sifted flour
1 cup oleo
1 egg
1 tsp. vanilla
1/2 tsp. almond flavoring
2 1/2 cups flour
1 tsp. soda
1 tsp. cream of tartar

Mix sugar & oleo. Mix in egg & flavorings. Measure flour by sifting. Blend dry
ingredients, stir in. Refrigerate 2 - 3 hours. Roll out 1/2 dough to 3/16" thickness
on lightly floured surface. Cut with cutters & sprinkle with sugar on lightly greased
cookie sheets. Bake for 7 - 8 minutes at 375 degrees. Makes 5 dozen.

    Eggnog Pie    

1 - 12 oz. can evaporated milk (icy cold)
1 small box instant vanilla pudding
1 envelope Dream Whip
1 1/2 tsp. vanilla
1/2 cup cold milk
nutmeg

Beat canned milk and Dream Whip until it starts to thicken. Add vanilla and pudding.
Beat until thick and smooth. Add milk and continue to beat until light and fluffy. Pour
into baked 8 or 9 inch pie shell. Sprinkle with nutmeg and chill before serving.

    Buckeye Candy    

1 lb. butter or margarine
3 lbs. powdered sugar
1/2 bar paraffin
2 lbs. peanut butter
12 oz. chocolate chips

Mix butter & peanut butter with fork. Add the powder sugar (mix with hands). 
Roll into balls. Put chocolate chips & paraffin into double boiler and melt, keeping 
it warm while you dip the balls. (Put toothpick into balls to dip them.)
