Sweet Potato Casserole | |
3 cups mashed sweet potatoes
1 cup sugar
1 cup coconut
1 tsp. vanilla
1 cup melted margarine
1 cup milk
2 eggs
Mix all the above ingredients and put in a buttered casserole dish.
TOPPING:
1 cup self-rising flour
1 cup pecans
1 stick melted margarine
1 cup brown sugar
Mix all topping ingredients and
sprinkle over casserole.
Bake at 350 degrees for 55 minutes.

Hash Brown Potato Casserole | |
2 lbs. frozen cubed hash browns
1/2 cup chopped onion
2 sticks margarine
1 can cream of chicken soup
2 cups grated milk cheddar cheese
salt & pepper to taste
1 pint sour cream
2 cups crushed corn flakes
Place frozen potatoes in a 9 X 12
baking dish. Melt 1 stick margarine and pour
on top of potatoes. Mix together: cheese, onion, salt,
pepper, sour cream, and
cream of chicken soup. Pour on top of potatoes. Melt 2nd
stick of margarine and
mix with the crushed corn flakes. Sprinkle atop potato
mixture and bake at
350 degrees for 1 hour or until bubbly & brown.
Freezes well.

Scalloped Corn | |
2 eggs
1 can cream corn
1 can whole corn (drained)
3/4 cup cornbread mix
1 small onion
1/2 stick melted margarine
1 cup sour cream
3/4 cup cheddar cheese
Beat eggs, add corn, cornbread mix,
onion, sour cream, cheese (saving some back
for topping) add oleo. Bake in greased 2 qt. casserole
dish for 1 hour at 350 degrees.

Crock Pot Scalloped Potatoes | |
5 - 6 large potatoes
1 can cream of celery soup
1 (8 oz.) pkg. shredded cheddar cheese
1 small onion
1/2 can water or skim milk
salt & pepper to taste
Peel and slice potatoes. Mix in the
onion and place in crock pot. Mix together the
soup and water/milk and pour over the potatoes. Add salt
and pepper to taste. Cook
on low for 10 hours. 1/2 hour before ready to serve, add
the shredded cheddar cheese.
